Chocolate pistachio cookies
I'm about to head to the train station to go to my parents, but figured I'd share a recipe with you all before leaving! Chocolate pistachio cookies!!
And yes, these are really yummy! (I mean, what can go wrong if you use almond, pistachios, coconut and chocolate!?)
So I wish everyone a great weekend, and perhaps some baking fun when you feel like it. I'm off to have a tasty BBQ now ;-)
Chocolate pistachio cookies
- 1/2 cup dried apricots, chopped
- 75g dark chocolate (75 - 80% cocoa)
- 1/4 cup almonds
- 1/2 cup pistachios
- 1/2 cup desiccated coconut
- 2 tbsp coconut oil
- 1 egg
1. Preheat oven to 175 degrees Celsius and line a baking tray with parchment paper.
2. In a food processor, combine all dry ingredients and process until coarse.
3. Add coconut oil and egg and process until well combined and a sticky mass has formed.
4. Shape the dough into 8-10 balls, put them on the prepared baking tray and flatten them with your hands to make cookies.
5. Bake for approx. 15 minutes until slightly coloured. Cool for at least 30 minutes and enjoy!

These sound really tasty! I love pistachios, coconut, and chocolate. I might substitute dates for the apricots, just because I have dates but no apricots...
