[CrockPot] Moroccan chicken stew

Today I used my CrockPot slowcooker for the 2nd time. I loved coming home to a hot meal, ready to eat. Especially since it tasted good too!
For the recipe, I basically threw some chicken and veggies in that were lying around in my fridge, added some spices and it actually worked out really well.
It's completely Paleo, it tastes good and it only took me 10 minutes to make just because I had to chop the vegetables. It doesn't get easier than that! Moreover, who says cooking paleo meals is time-consuming? Just invest in a slowcooker and you'll have a number of meals before you know it. All you have to do is put it on and in the mean time you can go about your daily business. No cooking stress whatsoever!
[CrockPot] Moroccan chicken stew (serves 2)
Ingredients:
- 2 chicken breasts (approx. 200g each)
- 2 onions, cut in half and thinly sliced
- 1 zucchini, diced
- 1 eggplant, diced
- 150g cherry tomatoes, halved
- 1 tsp Ras Al Hanout
- 1 tsp cinnamon
- 1/2 tsp powdered garlic
- 1/4 tsp curcuma
- salt and pepper to taste
- 2 tbsp creamed coconut concentrate, finely chopped
- 2 tbsp fresh cilantro, chopped
1. Put the chicken breasts on the bottom of the Crockpot and divide the onions over them. Throw in the dried herbs and spices, and the chopped coconut cream concentrate.
2. Divide the other vegetables over the chicken and put the lid on.
3. Cook on low for 8 hours.
4. Shred the chicken with a fork at the end of the cooking time and mix well.
5. Divide the dish over 2 plates and garnish with fresh cilantro. Enjoy!

Simple beet salad

Beet salad

This is one of those recipes that's just so easy to make.. You could hardly call it a recipe (since it only has 2 steps), but I liked it so much that I wanted to share it with you.
I guess most people who like beets sometimes have too much of them (leftovers..) and wonder how they can serve them in a different way than usual. I turned my leftovers into a simple, yet tasty salad.
You can make a meal out of it by adding in a few chopped boiled eggs, some shredded chicken, or some salmon or mackerel. All works really well! If you do still want it to be a salad, it might be wise to double the dressing ingredients so you'll keep the creamy texture.
And if you don't have any chives, spring onions, cilantro, parsley or even some mint will do the trick just fine. Well, I hope this inspires some people to get creative with those leftover beets!

Beet salad (serves 2)
- 2 cups finely chopped, cooked/roasted beets
- 1/3 cup coconut cream
- 2 tbsp lemon juice
- 3 tbsp chives, chopped
- black pepper

1. Combine coconut cream, lemon juice, chives and black pepper in a bowl and stir everything together.
2. Stir the coconut dressing into the chopped beets and serve. Enjoy!

Tomato fish curry

Tomato fish curry

I was actually planning to make a lemon fish curry, but then I figured I'd better use some of my tomatoes and ended up making this tomato fish curry. I really liked it.
Luckily this virus hasn't killed my appetite or taste buds yet!
And, because of the huge amount of lycopene found in tomatoes, this dish is chock full of anti-oxidants.  That's always good to know.

Tomato fish curry (serves 2)
- 2 spring onions, chopped
- 2 cloves garlic, chopped
- 5 medium tomatoes, chopped
- 1 small can of concentrated tomato puree (70g)
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1 cup coconut milk
- 350g tilapia fillets, diced
- 1/4 cup parsley, chopped
- 2 tsp coconut oil

1. Heat coconut oil in a frying pan and fry garlic and spring onions until soft.
2. Add tomatoes, tomato puree, cumin and coriander, and stir in the coconut milk. Bring to a boil.
3. Carefully drop in the diced fish and reduce heat to low. Simmer for approx. 10 minutes until the mixture has thickened and the fish is cooked.
4. Stir in the parsley at the last moment, serve hot and enjoy!

Egg salad

Whole 30 day 25 - 1

I don't really have a better picture than the one above, but this was my breakfast this morning. Including a yummy egg salad!
It had been a really long time since I had egg salad. Before going paleo, I used to eat it on my lunch sandwiches every now and then, store-bought, loaded with additives egg salad.
Since I'm too lazy (or afraid it won't work) to make mayonnaise, I figured I'd make my salad with mashed avocado and some coconut cream. Tastes differently, obviously, but really good nonetheless.
The best thing about this is that I have 2 servings left for the next few days!

Egg salad (serves 2-4)
- 6 hard boiled eggs
- 1 avocado
- 1/4 cup coconut cream
- 2 tbsp chives, chopped
- 2 tbsp spring onions, chopped
- 1 1/2 tbsp lemon juice
- lemon pepper

1. Peel the eggs, chop them up and transfer them to a bowl.
2. Cut the avocado in half lengthwise and scoop out the flesh, transfer to an other bowl.
3. Add the coconut cream to the avocado and mash it all together with a fork.
4. Stir the chives, spring onions, lemon juice and lemon pepper into the avocado mixture until well-combined.
5. Add the avocado mixture to the eggs, and mix well.
6. Serve cold, and enjoy!

Coconut Baba Ghanoush

Coconut Baba Ghanoush

Here it is, as promised, a new recipe.
I had never eaten eggplant puree before in my life. I never really was a fan of this vegetable, until I tasted grilled slices of it on a burger. That's when I realised it actually tastes really good!
What else could I do with eggplant? When mindlessly surfing to watch some foodporn, I ran into Baba Ghanoush. I always like food with foreign names, so I looked it up online; pureed eggplant with tahini, garlic, lemon and parsley. Sounds good.

I didn't have any tahini or parsley, so I figured I'd try it with coconut and cilantro instead. I also left out the garlic, as I didn't feel like adding it. Feel free to add a few cloves to the recipe below though.
I think the coconut adds a lot of sweetness to this dish, and it's packed with taste. I love it!
So, for everyone who's never had Baba Ghanoush before; just give it a try and I'm sure you'll like it.

Note: if you leave this in the fridge overnight, it's even better the next day!!

Coconut Baba Ghanoush (serves 2)
- 1 medium eggplant
- 2-3 tbsp lemon juice
- 3 tbsp creamed coconut / coconut butter (not coconut oil!)
- 3 tbsp fresh cilantro, chopped

1. Preheat oven to 200 degrees Celsius.
2. Wash the eggplant and cut it in half lengthwise. Put it in the oven with the cut side up on a baking tray lined with parchment paper, and bake for approx. 45 minutes until soft and slightly blackened. Let cool for a while.
3. When the eggplant is cool enough to handle, peel off the skin and chop up the flesh.
4. In your food processor, combine the eggplant flesh, lemon juice and creamed coconut and process until smooth.
5. Stir in the cilantro, serve and enjoy!

Lime chicken salad

Whole 30 day 16 - 2

I simply keep enjoying the many ways you can use shredded chicken. I don't think I'll ever get tired of it! Today I created a salad with it, along with some avocado, cabbage and carrots and a creamy coconut, lime and cilantro dressing. Really easy to create, and tasty too.
I served it with some roasted beets and called it lunch. Easy does it.

Lime chicken salad (serves 2)
- 300g cooked chicken, finely chopped
- 1 carrot, thinly grated
- 1/4 cabbage, grated
- 1 avocado, diced
- 2/3 cup coconut cream
- zest and juice of 1 lime
- 1/4 cup cilantro, chopped

1. In a large bowl, combine chicken, carrot, cabbage and avocado.
2. In a small bowl, stir the lime zest and juice and the cilantro in the coconut cream until well combined.
3. Scoop the dressing over the chicken and vegetable mixture and mix well to create a salad.

Serving suggestions:
- Scoop some of the salad into lettuce or cabbage leaves and roll them up to make easy lunch rolls.
- Serve on top of a thin omelet, along with some lettuce and fresh tomatoes
- Serve on top of these Paleo Chips from Jen's Gone Paleo
- Or scoop some of it on Elana's Almond pulp crackers

Or eat it just the way it is, like I did! As long as you enjoy it!

Chili lime chicken

Whole 30 day 11 - 3

Another Asian-style chicken recipe! Yup, I often make chicken this way, but I use different spices every time. My mom taught me everything about spices and they way they can make every dish taste better.
I have to say that this recipe worked out really well. And am I glad I've got more chicken, limes and cilantro, because I will be making it again really soon!
It's tasty and very healthy as well.
Why is it healthy?
It contains:
- coconut oil: good source of fat (want to know more about fats? Read this article on Balanced Bites)
- turmeric: has anti-inflammatory properties
- chili: helps the body to cool down during hot days
- chicken: lean protein, what's not to love?
- cilantro: anti-inflammatory, detoxifying, just to name a few (read this article for more info about cilantro)
Did I mention it's tasty yet? Oh and it's really quick and easy too..
Anyway, just try it.

Chili lime chicken (serves 2)
- 2 onions, chopped
- 400g chicken breasts, diced
- 3 tbsp coconut cream
- 1/2 tsp turmeric
- 1/2 tsp dried chili flakes
- zest and juice of 1 lime
- 1/4 cup fresh cilantro, chopped
- 1 tbsp coconut oil

1. Heat coconut oil in a wok or skillet and fry onions until soft.
2. Add chicken and fry until browned, then stir in the coconut cream, turmeric and chili flakes and bring to a simmer.
3. When the sauce has become really thick, stir in the lime zest and juice and the fresh cilantro.
4. Serve hot, and enjoy!

Creamy Arabic steak

Whole 30 day 8 - 3

To be honest, I don't like beef steak all that much, unless it has been cooked properly and there are no tough parts. An almost impossible result to achieve at home, unless you pay a whole lot of money for a decent piece of meat. That's also why I usually make stews. Very tender and tasty beef, doesn't cost much and you still get yourself some good quality protein!
What else could you wish for?
Today however, I realised I still had some steak in my freezer, that needed to be used. After over a month in my freezer I figured it wouldn't be so tender anymore so I decided to chop it up, marinate it and add a creamy sauce. Pretty good!
Would have been even better if I'd had some fresh herbs to add, but I didn't.. Of course you should definitely add some mint or cilantro to this dish if you happen to have some!

Creamy Arabic steak (serves 2)
- 300g beefsteak, diced
- 3 tbsp olive oil
- 2 tbsp Arabic spices
- 2 onions, chopped
- 2 cloves garlic, chopped
- 3 tbsp coconut cream
- 2 tsp coconut oil

1. Stir the Arabic spices into the olive oil in a large bowl and stir in the diced steak until well covered with the marinade.
2. Marinate in the fridge for at least an hour, preferably more.
3. Heat coconut oil in a frying pan and fry the onions and garlic until soft. Remove from pan and transfer to a bowl.
4. Fry the marinated steak over high heat until browned on all sides.
5. Stir in the coconut cream and onions with garlic and mix well.
6. Serve immediately and enjoy!

Walnut cookies

Walnut cookies

What's a girl to do when she finds herself at home on a Saturday night, it's raining outside, she just got a huge amount of walnuts, she's addicted to carbs, is recovering from a 'birthday cake hangover' and doesn't start the Whole 30 until tomorrow??
That's right, she bakes a batch of cookies! (and eats them while watching a movie..)

I spent about 45 minutes cracking walnuts to get enough for this recipe, but it was worth it.
Some time ago someone saw my supply of walnuts and mentioned to me I could also buy ones that have already been cracked. There's nothing wrong with putting in some effort to get yourself some food; it actually a really primal thought.
I also totally understand why primal people never ate that many nuts. They didn't have nut crackers back in the days so it must have taken one hell of a long time to crack them. I wonder how they did that..
Perhaps they smacked them with a rock or something like that. Maybe we could give some nuts to a chimp or orangutan and see what they do with it, that might give us an idea.
For now, just enjoy the fact that cracking nuts is an easy job for us and try making some cookies with them.
If you want you can save a couple of walnut halves and press them into the cookies for decoration right before baking, like I did.

Tamarind burgers

Tamarind burgers

About a month ago, I was doing my groceries and decided to make an Indonesian beef stew. I didn't exactly know what ingredients I needed so I called my mom (who did an Indonesian cooking class in the past) and one of the ingredients she mentioned was Tamarind paste.
Of course I couldn't find that at a regular supermarket so I just left it out. My mom did happen to find it a health food store and brought me a jar. I didn't really know how to use it, although I have been eating candied tamarind a few times. Tonight I decided to put some of it into burgers and it's really good!
It adds so much flavour without tasting overly sour or salty. It has a unique taste, in a good way. So if you don't know what to do with your tamarind paste, you could try these burgers.
Next time I might make some kind of sauce with it.

While enjoying my burgers another question popped to my mind; is tamarind even Paleo?? It comes from a pod after all, so it looks like a legume, although I believe it is actually a fruit. Plus it's processed (with some oil and added salt) so that doesn't make it a very good choice either.
I did some googling and found out that tamarind is very good to treat digestive issues, it's detoxifying and fights cancer because of the antioxidants it has. It also grows from a tree, isn't a grain, and you can even eat it raw! Sounds pretty Paleo to me. As long as you don't eat too much of it (it does contain quite some carbs), you will be fine while on a regular, not too strict Paleo diet.

I don't know why but I'm really hungry these days. Pretty much all the time. Although they might partially be cravings as well..
While I do make sure I eat sufficient amounts of protein, fat and veggies, I still feel like I haven't been eating enough. Weird.. And that's why I ended up eating a small bowl of desiccated coconut mixed with coconut milk and cocoa tonight.
Next question: is cocoa Paleo and is it allowed on the Whole 30?
I ended up reading the 'Great Cocoa Debate' on the Whole 9 Life website, which made me realise all the more that I'm totally addicted to carbs. I hardly ever eat real chocolate anymore, because it contains sugar, so I just replace it by mixing coconut with cocoa, which might be healthier, but it doesn't change my relationship with food and cravings for sweetness. Concluded: it's better if I don't have any cocoa while on the Whole 30.

Five spice chicken with Chinese spinach

Five spice chicken with Chinese spinach

Just did another attempt at my 300 workout (same one as last week) tonight. Although it was harder this time, because the weights I used for most exercises were heavier. Because of that, it took me 45 minutes to complete the workout, instead of just 30 last week. Doesn't matter though because it felt great being able to do it! I'll probably get easier over time.
Afterwards I ate a small bowl of creamed coconut, with some cocoa, yum! Great recovery food..
I called my parents tonight as well (we usually use Skype) and my dad was showing me his piece of these Chocolate Almond Joy Bars from Elana's Pantry, it looked so good.. I wish they could just send me one. My mom has turned trying all of Elana's recipes (mostly her recipes for baked goods) into a habit and she does a whole lot of baking, giving her own twists and turns to each recipe and they usually work out very well.
So I mentioned that Elana had posted a new recipe for Espresso Fudge Brownies today, and my mom's answer was: 'oh, I'm going to have to try those tomorrow!'. And I totally get it; those brownies do look really good.
At the moment I feel better while I'm eating hardly any nuts, but if I'd have them at home, I'd surely add them to just about everything because they're so good. Let alone when you bake with them. I still have a bag of almond flour in my pantry, but that's going to be used for special occasions only.

Yesterday I cycled to the market, huge grocery bag on hand to transport all my veggies and meat in, turns out the market wasn't there because it was a national holiday.. The local newspapers said there would be a market, so I figured they'd sell veggies too, but they only sold useless stuff.. Too bad!
I did end up going to the Asian supermarket and bought myself some greens I didn't know yet. I googled it and it turns out it's Chinese spinach, or Po Choi. Anyhow, it tasted good! I combined it with some leftover roast chicken and turned it into a quick dinner.

Easy breakfast chicken-pumpkin scramble

Chicken-pumpkin scramble

This morning I figured I'd give myself a good start by making this high-protein breakfast. I served it with some oven-roasted bimi (which is even yummier than roasted broccoli!) from last night.
I had gone to bed at 10p.m. but woke up at 4.30 already with an empty stomach. Luckily I was able to sleep for a while but I still managed to wake up before 6 again and feeling really fit. What a change since the last couple of days!
Perhaps the hard days of carb withdrawal symptoms are over now. Finally. And hey, it wasn't that hard!! Why did I cave in every single weekend over the last couple of weeks? I just don't know. I also don't have a clue why it feels different and easier this time.
I've already been eating along the guidelines of the Whole 30 this week, but I am getting hungrier by the day and need huge amounts of food. I'm still going to keep my starting date of the Whole 30 after my birthday though.
And yeah, that's because I know my mom's going to make me an awesome and delicious pie and I don't want to miss out on that, and I'm not going to either. Plus I want to stick to my Whole 30 plan for 30 days, no cheating, so I'm going to have to wait another week to start. Until then, I'm already enjoying the benefits of eating clean.

I'll be spending the afternoon and evening in Amsterdam today, having a good time with a friend. We're also planning to go to see a movie and hopefully I won't be hungry, thus able to resist buying popcorn. They really just don't have any paleo-friendly snacks at movie theatres.. (unless you only eat the salsa that is supposed to come with tortilla chips)

Creamy spinach

Creamy spinach

Yay, weekend!! It's been a long and busy week..
I've been doing quite some studying, some sports, but kept my meals really simple because I wanted to eat clean this week, making sure I didn't get any cravings. This afternoon (which usually happens on Fridays) I did get some cravings but didn't give in to them. I've also been a little tired these days, perhaps because I haven't been able to get enough sleep (due to waking up too early) and I might have a small virus bothering me. Therefore I've been taking some extra vitamin C and probiotics.
And to prevent further cravings tonight I scooped the cream off the top of a can of coconut milk and mixed it with some cocoa and desiccated coconut (I didn't use anything to sweeten it, I found the coconut added enough sweetness already). Very yummy, contains a lot of fat, and not that many carbs.
I usually eat more carbs over the weekend and less during the week, which always leaves me craving for carbs on Fridays. I really hate carb withdrawal symptoms.. Especially the restless feeling it gives me. But this time I've been consuming some more fat and protein than usual and it seems to be a little easier now. That's why I'm not going to give in this weekend, and I already know I'll feel much better on Monday.

I've also decided to start my Whole 30 soon. I've seen many people do it online and I think it'll be a really good thing for me to do before going to the USA in August. I wonder how I'll feel afterwards!
I'm probably going to start next week, right after my birthday. I can't think of a better way to start my life as a 24-year-old.

Yesterday I made this spinach dish, which tasted really good. I even took the leftovers with me to work, together with some diced pumpkin and beef, and a slice of fritatta. Still tasted good when cooled.
Just in case you can't get your hands on any creamed coconut; you could also use coconut milk for this dish, however, it will take a long time of simmering before your spinach mixture has thickened. The best substitute for creamed coconut is to buy a can of good quality coconut milk, put it in the fridge overnight and scoop the thick cream off the top of the milk. Use the cream in this dish, it'll make a huge difference.

Chocolate pistachio cookies

Chocolate pistachio cookies 1

I'm about to head to the train station to go to my parents, but figured I'd share a recipe with you all before leaving! Chocolate pistachio cookies!!
And yes, these are really yummy! (I mean, what can go wrong if you use almond, pistachios, coconut and chocolate!?)
So I wish everyone a great weekend, and perhaps some baking fun when you feel like it. I'm off to have a tasty BBQ now ;-)

Lemon chicken

Lemon chicken

I know I have made lemon chicken before, but I couldn't resist sharing this recipe with you. Of course it's different from my other version (it's not spicy, just to name a difference) but both are equally good. They're just different, therefore making it worthwhile posting this recipe.
Everytime I make myself lemon chicken, I could eat the whole batch.. That wouldn't be a problem at all! Of course I didn't actually do that, I carefully divided it over 2 plates, and I took the other serving with me to work today.

Tomorrow will be a national holiday over here so I've got the day off! I'm not quite sure what I'm going to do, probably some running, household chores, and some studying. Oh and holiday planning, which is going really well. So far, all hotels and my car have been arranged (and the flight of course). I can't really think of anything else that needs to be booked, but who knows, something might come up.

Apricot spice cookies

Apricot spice cookies

I made these cookies last Saturday because my mom came over to visit. I hate it when I don't have any baked goods available for my guests. The amount of dough could've easily made 8-10 cookies, but I decided to make just 4 cookies. While these were baking I quickly dusted and vacuumed my home, and I took a shower while they were cooling.
Dried apricots make a great base for any cookie or cake, they add sweetness, a lovely texture and help everything stick together like it should. These cookies are firm on the outside, but still have a bit of softness on the inside, yum!

Today is going to be a busy day for me! I'm going to the market for my weekly veggie supply, do some studying, write a letter to a penpal (yes I have those, and it's great fun!) and I'll probably look into my holiday plans once again as well. Oh and not to forget some running! And I also still want new shoes.. I guess I better get going right now!

Cinnamon pancakes

Cinnamon pancakes

I just had a really great day with my mom, who came over to visit me. We made a lovely meal together (recipe will be posted later) and enjoyed ourselves browsing around in the city center of Nijmegen. Shopping, eating, food shopping.. Great times!
My mom got me a super nice dress (I feel so spoiled!) and some yummy chocolates too. Foodwise, we enjoyed ourselves at the Asian supermarket, and couldn't resist having some (dairy-free) ice-cream.

Yesterday's breakfast consisted of cinnamon pancakes (with avocado and sausage stir-fry) and so did my breakfast the day before. The reason I made these pancakes twice is because I wasn't too satisfied with the result the first time. In my second batch I used less coconut flour and they worked out much better. So, here's the recipe;

Chicken fritatta with avocado

Chicken fritatta with avocado

In my opinion, a satisfying, filling breakfast really gives you a good start for the day. In the mornings, my digestive system seems to work most efficiently and I often find myself getting hungry again before my lunch break at work. (which is when I take a quick walk to the restaurant and buy myself a boiled egg and sometimes a tomato as well)
And it doesn't just work until lunch, everytime I get hungry before lunchtime, I will also get even more hungry before dinner. Hunger makes cycling back home, motivating myself to cook a nice dinner, and not collapsing on the couch afterwards become pretty hard. Let alone going for a workout in the evening!
So, a good breakfast is key!

The breakfast I made this morning will certainly keep me going for a longer time and I'll be energized all through the day. I served this fritatta with 1/2 avocado on top, really good!

Oh and something completely different; I booked the perfect accomodation for Yosemite National Park last night! I'm going to stay at Curry Village, in a canvas tent. I always wanted to sleep in the park for a night and this seemed like the perfect way to do it. It's just for 1 night, but I'm going to love it. It's my second time visiting Yosemite NP so I felt I didn't need to stay there for a longer time. On my way there I'll drive over the Tioga pass (since I'm coming from Lake Tahoe) and I plan to do some hiking in the valley in the afternoon. Let's just hope no bears will pay curry village a visit when I'm there.. Just the idea that I need to store all food and scented items (toiletries and such) in a bear proof locker on the outside of my tent gets me all excited. (and hoping none will attack my tent of course, you never know, but if this would happen on a regular basis, the village would probably have closed down by now)

Pan fried red snapper with lemon sauce

Pan fried red snapper with lemon sauce

Market day today, as I already mentioned. This time, I not only bought a whole lot of veggies, I also went to the fish stall. I had been buzzing around it for a couple of weeks now. Those people have probably thought to themselves 'when is she ever going to buy something??' a number of times, but today was the day.
First of all, I asked if they could clean the fish for me. No problem they said! Ok, well, then it was time to pick out some fish. I chose: 1 mackerel, 1 red snapper and 1 trevally.
The first choice was obvious; I like mackerel. And the other ones made me feel like I was on a holiday in Australia or Asia or somewhere far away.

The first thing I did back home was call my mom. Which went something like this 'Mom, I bought these fish and I don't know what to do with them..' of course I got the obvious suggestion that I should eat them. After all, their heads were chopped off and their insides removed so they wouldn't be doing any swimming over here, and the smell didn't make them suitable for decoration either.
My mom suggested pan frying the snapper and mackerel, and baking the trevally in my oven, good ideas!
So I decided to go for the red snapper today. First of all I didn't have a clue what to serve with it, but the fish looked Asian (nice colours!) so I went with carrot fries and an Asian spiced lemon sauce made with shii-take, onion, lemon, coriander, curry powder and coconut. Simple, but tasty!

When everything was prepared, carrots popped into the oven, I unpacked my fish and found out I didn't have a clue how to fillet it.. Oops..
YouTube brought me the solution in the form of a Hawaiian looking man who was talking about what to do when you've speared your fish from the ocean. How primal!!
Of course I didn't own a filleting knife whatsoever, so I just used my regular knife which worked out pretty well. I think I could've gotten more meat from the bones, but for a first time filleting job, I did a pretty good job if I may say so myself.

After pan frying my fillets (which were smaller than I had expected, so I simply ate them both) I took my first bite, and... pierced my mouth with a bone.. Ouch!
Luckily, that was just the first bite and I only found 3 bones in total. The lemon sauce combined perfectly with this flavourful white fish, and I loved it! I'm definitely going to buy my fish over there again, as it was pretty cheap as well.

In the afternoon I did some more shopping; I bought a 2,5l bucket of coconut oil. I use so much of the stuff that it really pays off to buy bigger quantities. And that's not all, I also got myself this fancy kitchen tool: a julienne peeler!
Foodwise; a great day!
So here's the recipe, and afterwards I'm going to clean up the mess in the kitchen.. Next up is running and practicing handstand pushups. (just because I want to be able to do those)

Coconut tortillas with Mexican beef

Coconut tortillas

Yesterday I found this amazing recipe for Primal Tex-Mex Tortillas at Mark's Daily Apple, and figured I should try it. His seasoning recipe is tasty too, but I made my own version, which you can see below.
His blog post says that these tortillas are the best primal ones out there so far, and well, they are! They're really easy to make, firm, won't fall apart when you flip them and they actually resemble tortillas, without the grains of course. Yum!! Made me a really good breakfast this morning and I thought I'd share it with everyone.
